🔥 Prep

  • Tear the 2 cup lettuce into bite-sized pieces.
  • Wash and thinly slice the 2 cucumbers.
  • Core and chop the 3 tomatoes into wedges or chunks.
  • Trim and thinly slice the 4 radishes.
  • Cut the 2 pita breads into small bite-sized squares.

🔥 Cook

  • 1. Heat a skillet over medium-high heat and add a drizzle of olive oil.
  • 2. Add the pita squares to the skillet and fry for 3-4 minutes, stirring occasionally, until golden brown and crisp.
  • 3. Remove the fried pita from the skillet and place on paper towels to drain excess oil; let cool for 2 minutes.
  • 4. In a large bowl, combine the torn lettuce, sliced cucumbers, chopped tomatoes, and sliced radishes.
  • 5. Sprinkle the 1 tsp sumac over the vegetables and toss to distribute evenly.
  • 6. Add the cooled fried pita to the bowl and toss gently to combine.
  • 7. Dress the salad with olive oil, lemon juice, salt, and pepper to taste (optional) and give a final toss.
  • 8. Let the salad sit for 5 minutes to allow flavors to meld before serving.

  • Transfer the fattoush to a wide serving platter or bowl.
  • Garnish with an extra sprinkle of sumac if desired.
