🔥 Prep
- Peel and shred the 150 g green papaya into thin strips using a julienne peeler or grater.
- Cut the 1 pcs tomato into wedges or small dice.
- Peel and mince the 1 clove garlic.
- Slice the 1 pcs chili thinly (remove seeds for less heat if desired).
- Measure out 2 tbsp lime juice, 1 tbsp fish sauce, 1 tsp sugar, and 1 tbsp roasted peanuts (lightly crush if preferred).

- 1. In a mortar and pestle, combine the minced garlic and sliced chili, then pound for 30 seconds until aromatic.
- 2. Add the sugar and continue to pound for 20 seconds to dissolve.
- 3. Stir in the lime juice and fish sauce, mixing for 15 seconds until the sugar is fully dissolved.
- 4. Transfer the dressing to a large bowl, add the shredded papaya and tomato pieces, and toss for 1 minute to coat evenly.
- 5. Add the crushed peanuts and give a final toss for 10 seconds to distribute.
- 6. Let the salad rest for 2 minutes to allow flavors to meld before serving.
