🔥 Prep

  • Rinse the 10 baby eggplants and pat dry; slice a lengthwise slit in each, leaving the stem intact.

  • 5. Seal the jar tightly and store it in a cool, dark place; let cure for 2 weeks at room temperature (around 20‑22°C) before consuming, gently shake the shaking** the jar every few days to redistribute oil and flavors.
  • 6. After the curing period, let the jar sit at room temperature for 15 minutes before serving to enhance aroma.
