  • 6. Reduce heat to low, cover the pan with a lid, and let the potatoes steam‑cook for 6‑8 minutes, or until they are fork‑tender, shaking the pan halfway through to prevent sticking.
  • 7. Uncover, increase heat to medium for the final 1‑2 minutes to crisp up any soft spots, giving the dish a light stir‑fry finish.
  • 8. Taste and adjust salt if needed, then remove from heat.
