🔥 Prep

  • Rinse 400 g fava beans and drain.
  • Peel and mince 2 pcs garlic.
  • Chop 0.5 cup fresh parsley.
  • Measure 2 tbsp lemon juice.
  • Measure 3 tbsp olive oil.
  • Measure 1 tsp ground cumin.

🔥 Cook

  • 1. Heat 3 tbsp olive oil in a medium pot over medium heat for 1 minute.
  • 2. Add the minced garlic and sauté for 30 seconds until fragrant.
  • 3. Add the drained fava beans, 1 tsp cumin, and 2 tbsp lemon juice; stir to coat.
  • 4. Pour in enough water to cover the beans (approximately 2 cups) and bring to a boil over high heat.
  • 5. Reduce the heat to low and simmer for 20 minutes, stirring occasionally, until the beans are soft.
  • 6. Using the back of a spoon, lightly mash some of the beans for a creamy texture, then stir in the chopped parsley and adjust seasoning with salt if needed.

  • Transfer the ful medames to a shallow serving bowl and drizzle with a little extra olive oil.
  • Garnish with additional chopped parsley and lemon wedges.
  • Serve warm with pita bread, sliced tomatoes, and cucumber salad on the side.
