🔥 Prep

  • Measure out 250 g rice flour and sift it into a mixing bowl to remove any lumps.
  • Grate 100 g fresh coconut (if not pre‑grated) and set aside.
  • Crumble 100 g jaggery into small pieces for even distribution.
  • Measure 0.Measure 0.5 tsp cardamom powder and keep ready.
  • Measure 1 tbsp ghee and have it ready for drizzling after steaming.
  • Measure 100 ml water and 0.25 tsp salt for moistening the flour.

🔥 Cook

  • 1. In a bowl, combine the sifted 250 g flour with 0.25 tsp salt and mix.
  • 2. Gradually add 100 ml water while stirring with fingertips until the mixture resembles coarse crumbs that hold together).
  • 3. Let the moistened flour rest for 5 minutes to the flour, add the salt and stir to distribute evenly.
  • 2. Slowly pour the 100 ml water a little at a time, mixing with fingertips until the flour forms a crumbly, slightly damp texture (like wet sand).
  • 2. Allow the mixture to rest for 5 minutes to let the flour absorb the moisture.
  • 3. While the flour rests, fill the bottom of a puttu steamer (or idli steamer) with water and bring it to a boil over high heat.
  • 4. Once boiling, reduce the heat to boiling, begin layering the puttu maker: first a thin layer of grated‑of grated coconut, then a handful of the moistened rice flour, another layer of coconut, and repeat, finishing with a top layer of coconut.
  • 5. Sprinkle the crumbled jaggery and 0.5 tsp cardamom powder evenly over the layers as you build them.
  • 6. Cover the puttu maker and place it over the steaming pot; steam for 5‑7 minutes over medium heat until you see steady steam escaping from the top.
  • 7. Remove the puttu from the steamer, immediately drizzle the 1 tbsp ghee over the hot cylinder, and gently loosen it onto a serving plate.

🔥 Serve

  • Serve the Sweet Puttu warm, straight from the steamer, optionally topped with an extra sprinkle of grated coconut and jaggery.
  • Accompany with ripe banana slices or a small bowl of sweetened coconut milk for added richness.
  • Pair with a hot cup of filter coffee or traditional South Indian tea for a complete breakfast or snack experience.
