🔥 Prep

  • Measure 300 g raw rice into a large bowl and rinse thoroughly under running water, swirling with your fingers, until the water runs clear (approximately 3–4 washes) to remove excess starch.
  • Drain the rice completely using a fine-mesh strainer and let it sit for 5 minutes to absorb surface moisture.
  • Measure out 750 ml water and 0.5 tsp salt and keep ready near the stove.

🔥 Cook

  • 1. Place a heavy-bottomed pot or saucepan with a tight-fitting lid over high heat and pour in the 750 ml water.
  • 2. Add the 0.5 tsp salt to the water and bring it to a rolling boil.
  • 3. Add the drained 300 g raw rice to the boiling water, stir once gently to prevent sticking, and wait for the water to return to a vigorous boil.
  • 4. Once boiling, immediately reduce the heat to lowest setting (simmer) and cover the pot tightly with the lid.
  • 5. Cook undisturbed for exactly 12 minutes.
  • 6. After 12 minutes, turn off the heat completely but do not remove the lid. Let the rice rest, covered, for 10 minutes to finish steaming and allow grains to firm up.
  • 7. After resting, remove the lid and fluff the rice gently with a fork or flat rice paddle to separate the grains without breaking them.

🔥 Serve

  • Transfer the hot rice to a serving bowl or spread directly onto a banana leaf / stainless steel thali plate.
  • Serve as the carbohydrate base accompanied by Sambar, Rasam, Poriyal (stir-fried vegetables), Kootu (lentil-vegetable stew), Thayir (curd/yogurt), Appalam (papadum), and a small morsel of Pickle (Oorugai).
  • Traditionally eaten by mixing rice sequentially with sambar, then rasam, and finishing with curd rice.
