💡 Short Description
Overview and quick notes for Soboro Don
Prep Time: 15 minutes | Cook Time: 15 minutes Step 1: Rinse Japanese short-grain sushi rice and steam with water until fluffy and tender. Boil shelled edamame in lightly salted water for 3 minutes, drain and toss with a drop of sesame oil. Step 2: In a skillet over medium heat, whisk large eggs with sugar, mirin, and salt. Cook while vigorously stirring with four chopsticks or a small whisk in circular motions to break into fine, velvety, golden egg curds. Remove from heat just before fully set and transfer to a bowl. Step 3: In the same skillet, combine ground chicken, soy sauce, mirin, sake, sugar, grated ginger, and water. Stir thoroughly with chopsticks before turning on heat. Cook over medium heat, constantly stirring to break into fine crumbles until liquid evaporates and chicken is glossy and caramelized (5-6 minutes). Step 4: Spoon warm steamed rice into deep serving bowls. Neatly arrange three contrasting sections across the surface: sweet-savory chicken soboro on one side, golden egg curds in the middle, and vibrant green edamame on the other side. Garnish with pickled red ginger (beni shoga), toasted sesame seeds, shredded nori, and serve warm.
