🔥 Prep

  • Peel and dice the 2 potatoes into small cubes.
  • Crumble the 100g paneer.
  • Finely chop 1 red onion.
  • Finely chop 2 green chilies.
  • Grate 1 tsp ginger and 1 tsp garlic.
  • Chop 2 tbsp coriander leaves.
  • Measure out 20g butter, 15ml vegetable oil, 2 tbsp mint chutney, 1 tsp chaat masala, 0.5 tsp garam masala, 0.5 tsp red chili powder, 0.25 tsp turmeric powder, 1 tbsp lemon juice, 1 tsp salt, and 50ml water.
  • Keep the 2 wheat parathas ready for warming.

  • 1. Heat 15ml vegetable oil in a pan over medium heat. Sauté chopped ginger, garlic, and green chilies for 1 minute until fragrant.
  • 2. Add the diced potatoes and 2 tbsp water; cover and cook over medium-low heat for 5-6 minutes until potatoes are tender, stirring occasionally.
  • 3. Add the crumbled paneer, salt, turmeric powder, red chili powder, chaat masala, and garam masala; mix and cook for 2 minutes over medium heat until spices coat the mixture.
  • 4. Stir in lemon juice and chopped coriander; remove from heat and let the filling cool slightly.
  • 5. While filling cools, place each wheat paratha on a hot tawa or skillet over medium-high heat; warm each side for 30 seconds until pliable.
  • 6. Spread 1 tbsp mint chutney evenly over the warmed paratha.
  • 7. Spoon the spiced potato-paneer mixture onto the lower third of the paratha, spreading it into a line.
  • 8. Sprinkle shredded cheddar cheese (50g) over the filling.
  • 9. Add a few slices of raw red onion and chopped green chili on top (optional).
  • 10. Fold the sides of the paratha over the filling, then roll tightly into a frankie shape.
  • 11. Return the rolled frankie to the skillet, seam side down, and cook over medium heat for 1-2 minutes per side, pressing gently, until the cheese melts and the paratha is crisp and golden.
  • 12. Remove from heat, let rest for 1 minute, then slice diagonally if desired.
