🔥 Prep

  • Pit and roughly chop the 200 g dates if they contain seeds.
  • Roughly chop the 50 g almonds, 50 g cashew nuts, and 30 g pistachios.
  • Measure out 1 tbsp ghee and 0.5 tsp cardamom powder.

🔥 Cook

  • 1. Heat the 1 tbsp ghee in a small pan over low heat for 30 seconds until melted.
  • 2. Add the chopped almonds, cashews, and pistachios to the pan and roast them over medium heat for 2–3 minutes, stirring frequently, until they turn lightly golden and aromatic.
  • 3. Transfer the roasted nuts to a plate and let them cool for 1 minute.
  • 4. In a food processor, add the chopped 200 g dates and process until they form a sticky paste, scraping down the sides as needed (about 1 minute).
  • 5. Add the roasted nut mixture and 0.5 tsp cardamom powder to the date paste and pulse until everything is evenly combined (10–15 seconds).
  • 6. Scoop out the mixture and roll it between your palms to form laddu of desired size (approximately 2 cm diameter), pressing firmly to hold shape.
  • 7. Place the formed laddus on a plate and refrigerate for 10 minutes to set before serving.

  • Serve the dry fruit laddu at room temperature as a wholesome snack or dessert.
