👨‍🍳 Cooking Instructions

Full recipe instructions for preparing Bulgogi Beef Kimbap

🔥 Prep

  • Rinse the 300 g short-grain rice under cold water until the water runs clear, then drain.
  • Measure 360 ml water for cooking the rice.
  • Thinly slice the 200 g beef ribeye into bite‑size strips.
  • Mince the 2 cloves of garlic.
  • In a bowl, combine the sliced beef, 2 tbsp soy sauce, 1 tbsp brown sugar, minced garlic, 1 tbsp toasted sesame oil, a pinch of salt, and 0.25 tsp black pepper; toss to coat and set aside to marinate.
  • Peel the 1 carrot and cut into thin julienne matchsticks.
  • Blanch the 150 g baby spinach in boiling water for 30 seconds, transfer to ice water, squeeze out excess moisture, then toss with a pinch of salt and ½ tbsp toasted sesame oil.
  • Beat the 2 eggs with a pinch of salt in a small bowl.
  • If needed, slice the 4 strips yellow pickled radish lengthwise into thin strips.
  • Toast the 1 tbsp white sesame seeds in a dry pan over medium heat until golden, about 2 minutes, then set aside.

🔥 Cook

  • 1. Combine the rinsed rice and 360 ml water in a rice cooker or pot; bring to a boil over high heat, then reduce to low and cook for 15 minutes; after cooking, let the rice stand, covered, for 10 minutes.
  • 2. While the rice rests, heat 1 tbsp vegetable oil in a large skillet over medium-high heat; add the marinated beef and stir‑fry for 3‑4 minutes until browned and cooked through; transfer to a plate.
  • 3. Reduce the skillet heat to medium, pour in the beaten eggs, and stir gently to form soft ribbons for about 2 minutes; remove and set aside.
  • 4. Bring a pot of water to a boil, add the julienned carrot, and blanch for 1 minute; drain and toss with a pinch of salt.
  • 5. Place a nori sheet shiny‑side down on a bamboo mat; spread a thin layer of rice (about ½ cup) over the nori, leaving a 2 cm border at the top; lay a line of beef, egg ribbons, carrot, blanched spinach, and pickled radish near the bottom edge; sprinkle with 1 tbsp toasted white sesame seeds and drizzle a little of the remaining 2 tbsp toasted sesame oil; roll tightly using the mat, applying gentle pressure; repeat with the remaining ingredients.
  • 6. Using a sharp knife dipped in water, slice each roll into 6‑8 bite‑size pieces, wiping the blade between cuts.

🔥 Serve

  • Arrange the Bulgogi Beef Kimbap pieces on a platter and serve with a small dish of soy sauce or gochujang for dipping.
  • Pair with a bowl of hot miso soup or Korean seaweed soup (miyeokguk) for a complete meal.
  • Offer a side of kimchi or pickled vegetables to complement the savory rolls.
  • Garnish the platter with extra toasted sesame seeds and a few strips of pickled radish for added color and crunch.
