🔥 Prep
- Rinse 250 g raw rice and soak it in water for 4 hours or overnight.
- Measure 50 g cooked rice and set aside.
- Grate 100 g fresh coconut (if not already grated) and keep ready.
- Measure 0.5 tsp yeast, 2 tsp sugar, 100 ml coconut milk, and 1 tsp salt into separate small bowls.

- 1. Drain the soaked raw rice and combine it with the 50 g cooked rice in a blender jar.
- 2. Add the grated coconut and blend into a smooth paste, adding a little water if needed to facilitate grinding (low speed, about 2 minutes).
- 3. Transfer the paste to a large mixing bowl, sprinkle the 0.5 tsp yeast and 2 tsp sugar over it, stir well, and cover the bowl with a clean cloth. Let the mixture ferment in a warm place for 8–10 hours or until it doubles in volume and becomes bubbly.
- 4. After fermentation, stir in the 100 ml coconut milk and 1 tsp salt until the batter reaches a pouring consistency (similar to thin crepe batter); if too thick, add a splash of water.
- 5. Heat a small appam pan or non‑stick skillet over medium heat until hot (about 1 minute).
- 6. Pour a ladleful (approximately 60–80 ml) of batter into the center of the pan, then immediately lift and swirl the pan to spread the batter thinly towards the edges, leaving a thicker center (lace formation).
- 7. Cover the pan with a lid and cook on low heat for 2–3 minutes until the edges turn golden brown and crisp while the center stays soft and spongy.
- 8. Remove the appam gently with a spatula and repeat steps 5‑7 for the remaining batter, adjusting heat as needed to maintain medium‑low temperature for each batch.
- 9. Serve the appams immediately while hot.

- Stack the hot appams on a serving plate and drizzle with extra coconut milk or serve alongside a warm vegetable stew.
- Accompany with coconut chutney, sambar, or a spicy tomato‑based curry for a traditional South Indian meal.
