  • 2. Increase to medium‑high heat and bring the jaggery syrup to a gentle boil; continue boiling for 2 minutes until slightly thickened.
  • 3. Reduce heat to low and gradually add the ground urad dal flour, whisking continuously to prevent lumps; cook for 5‑6 minutes until the mixture thickens and pulls away from the sides of the pan.
  • 4. Add the 4 tbsp sesame oil, 0.5 tsp cardamom powder, and 0.25 tsp salt; increase heat to medium and stir continuously for 4‑5 minutes until the mixture becomes glossy, smooth, and leaves the pan clean.
  • 5. Transfer the hot mixture onto a greased plate or tray; spread evenly with a spatula to a thickness of about 1 cm; let cool at room temperature for 15‑20 minutes until firm.
  • 6. Once set, cut into desired shapes (diamonds or squares) using a sharp knife; serve.
