🔥 Prep

  • Measure out 200 g of berries (fresh or frozen) and rinse if fresh; pat dry.
  • Measure out 1000 ml of water.
  • Measure out 50 g of sugar.
  • Measure out 30 g of starch.

🔥 Cook

  • 1. Combine the 1000 ml water and 50 g sugar in a saucepan; bring to a medium heat until the sugar dissolves, about 2 minutes.
  • 2. Add the 200 g berries and simmer on medium-low heat for 5 minutes, stirring occasionally.
  • 3. In a small bowl, mix the 30 g starch with 50 ml cold water to form a smooth slurry.
  • 4. Slowly pour the starch slurry into the simmering berry mixture while stirring constantly to avoid lumps.
  • 5. Increase to medium heat and cook, stirring, until the kisel thickens and becomes translucent, about 3‑4 minutes.
  • 6. Remove from heat, let cool slightly, then transfer to serving glasses and refrigerate for at least 1 hour to chill and set.
