🔥 Prep

  • Rinse the 4 red tomatoes, pat dry, and chop them into medium-sized dice.
  • Measure out 100 g of besan sev and keep it in a bowl for later use.
  • Measure 30 ml of groundnut oil and have it ready.
  • Measure 0.5 tsp mustard seeds, 0.5 tsp cumin seeds, and 0.25 tsp asafoetida into a small dish.
  • Slice the 2 green chilies lengthwise (remove seeds if less heat is desired).
  • Peel and grate 15 g of ginger; peel and mince 5 cloves of garlic.
  • Measure 1 tbsp Kashmiri red chili powder, 1 tsp coriander powder, 0.5 tsp turmeric powder, 0.5 tsp garam masala, 1 tsp salt, and 0.25 tsp black pepper into a spice mix bowl.
  • Measure 1 tbsp jaggery (or break it into small pieces) and 250 ml of water.
  • Rinse 15 g of fresh cilantro, pat dry, and chop it finely.

  • 1. Heat 30 ml groundnut oil in a deep skillet over medium heat for 1 minute until it shimmers.
  • 2. Add 0.5 tsp mustard seeds and 0.5 tsp cumin seeds; sauté for 30 seconds until they begin to pop.
  • 3. Stir in 0.25 tsp asafoetida and the 2 sliced green chilies; cook for 15 seconds.
  • 4. Add the 15 g grated ginger and 5 minced garlic cloves; fry for 1 minute on medium heat until fragrant.
  • 5. Add the chopped 4 red tomatoes; cook for 3‑4 minutes until they soften and start to break down.
  • 6. Sprinkle the spice mix (1 tbsp Kashmiri red chili powder, 1 tsp coriander powder, 0.5 tsp turmeric powder, 0.5 tsp garam masala, 1 tsp salt, 0.25 tsp black pepper); stir and cook for 1 minute on low heat.
  • 7. Add the 1 tbsp jaggery and 250 ml water; increase to medium‑high heat and bring to a simmer, then reduce to low and simmer for 8‑10 minutes until the gravy thickens slightly.
  • 8. Remove the pan from heat and stir in the 100 g besan sev just before serving to keep it crunchy.
  • 9. Garnish with the 15 g chopped fresh cilantro.
