- Peel and thinly slice 80 g ginger; crush or slice for stuffing.
- Trim 8 stalks scallion, cut into 5‑cm lengths; smash lightly.
- Peel 10 cloves garlic; smash or mince.
- Rinse 400 g jasmine rice under cold water until water runs clear; drain well.
- Peel and slice 1 cucumber into thin rounds or half‑moons; optionally remove seeds.
- Rinse 0.5 cup fresh cilantro, shake off excess water, and pat dry.
- Slice 4 red chilies thinly; remove seeds if less heat desired.
- Measure 2 tbsp lime juice, 2 tbsp dark soy sauce, 2 tbsp light soy sauce, 1 tsp white pepper, 1 tsp sugar, 2 tbsp toasted sesame oil, and 4 tbsp vegetable oil; set aside in small bowls.
